Well, since I bought the slicer in order to be able to make carpaccios at home, I immediately purchased this blade as well. When the slicer arrived (with the regular, serrated blade), I didn't want to wait for the additional blade before using it, so I proceeded to use the slicer with the provided blade. I had the eye of round trimmed and frozen, then moved it for a few hours to the bottom drawer of the fridge so it was still frozen, but not so hard. When I cut it with the slicer, I was able to slice the beef as thin as I needed it. I have also been able to slice roast beef in very nice and thin slices (not as thin as the carpaccio) using the serrated blade, as long as it had been left in the fridge overnight prior to being sliced. If your thinking of buying one then you need this blade. It is necessary to freeze the meat and then thaw it just a little bit and start slicing while it's just a little less than rock-solid. Lamb & beef cuts thinner than paper are very doable this way. Only negative really is that the there is no easy way provided to safely store the spare blade - both are sharp as heck. I just kept the original plastic wrapper this one shipped in but it's less than ideal. |
